Caramel Egg Pudding

Potato Moong Cutlets

Ingredients : Potatoes, boiled –  5 nos.Bread slices (edges trimmed) – 3 nos.Bread crumbs – 1/2 cupSalt to taste For filling – Moong, soaked and boiled – 1 cupGreen chillies, chopped finely – 3 nos.Fresh coconut, grated – 1 tbspCoriander leaves, chopped – ½ cupChaat 

Sol Kadhi

Ingredients: Kokum, dried – 8-9 nos.Coconut, grated- 1 no.Garlic cloves – 3 nos.Green Chilli, chopped – 1 no.Cumin – ½ tspSalt to tasteCoriander leaves, chopped- 1 tsp Method: Soak the kokums in ½ cup of warm water for 15-20 minutes.Squeeze the juice from the kokums

Ingredients: Big Green Chillies – 6 nos.Chilli powder- 1 tspTurmeric powder- ½ tspCoriander powder- 1 tspCumin powder- ½ tspAmchoor – 1 tspBesan – 1 cupOil – 3 tbspSalt to taste Method : Make a slit in the chillies along their length. Scoop out the seeds. 

Pudinewale Aloo (Potato with Mint Sabzi)

Ajwain wali Arbi

Ingredients : Arbi – 250 gmAjwain – 3 tspRed chilli powder – ½ tspDhania powder – ½ tspJeera powder – ½ tspAmchur- 1 tspOil – 4 tspSalt : as per tasteJuice of 1 lemon Method : Boil the arbi in pressure cooker for 1 whistle. 

Beetroot and orange salad :

Ingredients : ¼ kg beetroot 3 tsp fresh orange juice 1 sprig mint Rock salt to taste Method : Boil the beetroot in water till tender. Peel and slice it finely. Arrange on a plate and pour orange juice. Sprinkle rock salt and chopped mint.

Carrot, raisin and peanut salad

Ingredients : 250 gm grated carrots 2 tbsp raisins, soaked in warm water for few minutes  2 tbsp peanuts, roasted and coarsely chopped 1 tsp chopped green chilli  1 tsp chopped coriander Dressing ingredients:: 3 tbsp lemon juice 2 tbsp date paste 1 clove crushed
