Sol Kadhi
Ingredients:
Kokum, dried – 8-9 nos.
Coconut, grated- 1 no.
Garlic cloves – 3 nos.
Green Chilli, chopped – 1 no.
Cumin – ½ tsp
Salt to taste
Coriander leaves, chopped- 1 tsp
Method:
Soak the kokums in ½ cup of warm water for 15-20 minutes.
Squeeze the juice from the kokums by pressing them with the fingers. Keep the juice along with the water aside and discard the squeezed pulp.
Grind the grated coconut, garlic, green chilli and cumin along with 1 1/2 cups of warm water. Sieve the ground mixture through muslin cloth. Press well to remove as much liquid as possible. The coconut milk which comes out after straining is the first extract of coconut milk. Transfer the paste left in the muslin cloth to the mixer along with ½ cup of warm water. Blend and strain again through muslin cloth . This is the second extract of coconut milk. Mix the first and second extracts of coconut milk.
Add the kokum water and salt to the coconut milk. Garnish with coriander leaves.
