Egg Curry (Goan)
¹Ingredients:
Eggs, hard boiled – 6 nos.
Onion, finely chopped- 1 no.
Garlic cloves – 6 nos.
Coconut, fresh grated – 1 cup
Red Chillies- 6 nos.
Turmeric powder- 1/4 tsp
Coriander seeds – ½ tsp
Cumin seeds – ¼ tsp
Mustard seeds – ¼ tsp
Cloves – 3 nos.
Peppercorns – 8 nos.
Tamarind- small ball
Green coriander, finely chopped- 1 tbsp
Oil – 1 tsp
Salt to taste
Method :
Peel the boiled eggs into halves.
Grind the coconut, red chillies, garlic, coriander seeds, cumin seeds, mustard seeds, peppercorns, cloves, turmeric powder and tamarind to a fine paste.
Heat oil in a pan. Add the chopped onions and fry them till golden brown. Add the coconut paste and salt. Add sufficient water to make a gravy. Cook for some time. Add boiled eggs and garnish with coriander leaves. Serve
